- Before each use, wet the surface briefly with cold water to help resist staining and food absorption
- Wash with mild soap and warm water; towel dry immediately
- Do not soak or leave standing in water
- To dry, stand the board upright with the grain running vertically and allow to air dry completely
- Store in a cool, ventilated place away from direct sunlight and heat sources
- Remove stains by rubbing a cut lemon across the surface; knife marks are normal and expected
- Both sides can be used; if the board begins to bow, flip it and use the other side until it re-flattens
